Ginger Peach Frozen Yogurt



Ginger Peach Frozen Yogurt

1/2c water
1/4c sugar
1 inch fresh ginger

3 large peaches

2c greek style yogurt
1/4c crystalized ginger chopped into small pieces


Peel the fresh ginger, and chop it into large chunks. Combine with water and sugar and bring to a boil. Remove from heat and let steep for 15-20 minutes.
Meanwhile, Dice the peaches. Remove the ginger chunks from the syrup. Combine the syrup and peaches in a large saucepan. Simmer over medium heat until peaches are very tender. Remove from heat and cool to room temperature. Puree about 2/3s of the mixture. Combine with yogurt and chopped ginger. Chill thoroughly.
Freeze as per your ice cream maker. Serve immediately or freeze until firm (a couple hours)


What i've been up to...

I've been a little AWOL because of Hurricane Irene. We had some major flooding and had to evacuate. I took our two little girls to Ottawa, Canada to visit my mom.
Normally we wouldn't have flooded as bad as we did. We were not anticipating major flooding at all. But the dam upstream broke, so they came by and told us we needed to evacuate IMMEDIATELY. I had to make fast decisions about what got to come with us. Naturally I brought the computers and cameras. I also brought the Ice Cream Maker.

I've been getting more adventurous with recipes.
I tried this Cake Batter Ice Cream Recipe. It was so simple and SOOOOO delicious. And to be honest it was even better than any of the custard recipes I've made so far!

The day before we evacuated I made Lemon Meringue Ice Cream. It was delicious! Though I found it a little too tart, so when I make it again I'll be reducing the lemon a bit.

Once I got to Ottawa I knew I had to make some ice cream for my Mom. In seeking out the ingredients for more Cake Batter ice cream I decided to try making it with Carrot Cake Mix. I'm going to make more soon so I will make sure to blog about it when I do.

In cleaning out my Mom's freezer, I remembered that they had found an area that grows wild blackberries and had pounds of them frozen. So I made Lemon Blackberry Swirl Ice Cream. The Lemon base for this was fantastic!

And since I've been back I tried my hand at frozen yogurt. I can't wait to try more frozen yogurt flavors! (watch for a new recipe coming up!)
